There would be a winch car with the train that would use a cable to pull a plow through the insides of the cars, forcing the ballast out. The hinged sides could be unlocked for discharging. Also note the hinged drop decks between the cars so the plow could travel between them (the cars had removable ends to make them "solid" as well). More modern bottom-discharge ballast hoppers largely replaced these during the 1950's (at least a few were still kicking around the system into the early 70's). The old old style ballast gondolas.
